I have always loved the idea of baking and cooking but I never seem to be very good at it. I had thought that once I moved in to my own home it would just be something that came to me and I would pick it up along the way. However, I have been in my new home for just over a year now and I am still yet to be a baking goddess. I stumbled across this No-Bake Energy Bites recipe over on Gimme Some Oven ( you can read the original recipe here ) and it looked easy enough, and so with a few modifications I decided to give it a go.
I did end up making these little treats for the boy as he is very into his fitness and is in the process of bulking up so the recipe is slightly modified to his tastes but they are just as yummy and healthy for me to eat as they contain no fat and are really natural. I followed these quantities exactly and the mixture ended up being perfect in consistency and made 15 little balls which I have stored in a plastic container.
The basics of the recipe are:
1 cup of oats
2/3 cup of coconut
1/2 cup of peanut butter (organic)
1/3 cup of honey
1/4 cup of cocoa powder (unsweetened)
Optional ingredients are:
raisins, chopped nuts, chocolate drops, chopped cherries, dried fruit ect
but to keep in with the recipe pick one and add only 1/2 cup of these ingredients and if you want to add more than one you'll have to double up the other ingredients or only add amounts that equal 1/2 a cup.
I used a little coffee cup that I had but any cup/mug/container will do just as long as you use the same one though out. I measured out each ingredient and put them all into one mixing bowl and mixed together using my finger tips. Once it was all evenly mixed I put the bowl into the fridge whist I tidied up and put everything away so that it would be a bit easier to roll out the mixture. After about 10 minutes I rolled out the mixture into tea spoon sized mounds in my palms and they were ready to go. I have been really impressed with this little recipe and for a baking newby like me these have been a perfect introduction into the baking world.
